Cherries and walnuts are such good friends that blending them together makes breakfast feel a bit more extravagant, although the protein from the nuts nicely balances the rest of the sweetness of the drink. Frozen fruit will yield a thicker chillier beverage. Make this vegan by substituting almond milk for the milk and yogurt in the recipe.

Cherry Wild Rice

Caramelized cauliflower & onions with a wild rice blend are drizzled with a tangy red wine vinaigrette, a generous handful of cherries, herbs and walnut bits. Make this a main dish salad, by adding extra walnuts, shredded chicken or chunks of your favorite cheese, such as feta, sharp white cheddar or even blue.

What a lovely way to showcase both chestnuts and those sweet little cuties on a bed of spinach greens. Creamy yogurt dressing brings everything together. If you don’t have dates, use dried apricots or cranberries instead. Walnuts substitute nicely for the chestnuts if they are not available.

Chicken & Slicker Dumplings

These are almost fluffy noodles rather than biscuit dumplings. I grew up with the biscuit style drop dumplings, but I learned to make these Southern style dumplings from my husband’s darling former landlady and they are adored by many. They come together quickly. If you do not have a rolling pin, try using a wine bottle or simply press & pat the dough flat. It is a forgiving recipe, so enjoy the process without being intimidated. The buttermilk gives a lovely flavor to the dumplings, but the broth, if cold, works in a pinch for a dairy-free choice. Substitute coconut oil for the butter.

Chicken Parmesan

This classic Italian dish is an absolute favorite of in our family. We change up the sauces, so this recipe is only the Parmesan breaded chicken. There are directions for baking or pan-frying. While a slice of mozzarella melted on top is common, we find the parmesan & breadcrumb crust is plenty. Bake this with an oven roasted homemade or your favorite store-bought marinara.
