Ginger-Garlic Broth

If you don’t have time or bones available to make your broth from scratch simply doctor up your favorite broth with the garlic and ginger. Instead of simmering for hours, it will become tastiness within about 20 minutes. The vinegar is used to help draw out the healthy minerals in the bones, but is optional.

Pan braise the beets, toss with baby arugula and a crumble of goat cheese. A sprinkle of your favorite nuts instead of the goat cheese will give you a nice vegan and dairy free alternative.

Inevitably there are leftovers of the Goddess Dressing and other then a simple salad what more could be made? Why not combine some other leftover roasted vegetables with a bit of lettuce or baby spinach, leftover chicken or shrimp, drizzle of the Goddess Dressing and wrap it all up in this wrap. It would also be tasty with a sprinkle of your favorite cheese or avocado slices.

A simple lunch sent from a goddess.

Golden Beet Soup

This sunshine soup, as the recipe’s creator Jaime Mayfield of Seasonal Veg Head describes it, is made possible with a couple bunches of golden beets. Certainly other colors of beets could be substituted, but keep in mind that even one red beet will stain the soup to its own dramatic shade. Skip the sour cream if making this vegan and top with your own favorite topping instead; maybe nuts or even coconut cream. Thanks, Jaime, for your delicious contribution!
