Horseradish Dressed Greens

Pungent horseradish plays well with crisp lettuce greens for this simple flavor packed salad. Add more horseradish depending on the strength of the flavor. It varies from root to root, so add more to your personal taste. Use a veganaise mayonnaise or your preferred creamy spread instead of the yogurt to make this vegan.

Hummus

A food processor works best for Hummus for a creamy, smooth consistency. A blender is a decent substitute, but some blenders will require a bit of water. If you are without equipment, mash this with a potato masher. It will be chunky- but still quite tasty.

Immune Support Muesli

Toss together your favorite rolled grains such as oats, rye, spelt, kamut or quinoa with your favorite nuts, dried fruit, seeds, and more. This is our easy suggested combination, but toss together all the possibilities that make you happy. Keep this cereal in the refrigerator in an airtight container for a couple of weeks. Substitute seeds for the nuts to make this nut-free.

Jamaican Black Bean Burgers

These Jamaican inspired all vegan burgers use black beans & brown rice as the base. You can make these as spicy or mild as you like simply by adjusting the heat of the hatch chili peppers. Adjust the taste until you are satisfied. It is certainly easiest using a Food Processor, but if you do not own one simply use a potato masher, large fork or slotted spoon to mash the ingredients up a bit. If you have a cast-iron pan this is the best pan to develop the lovely crust that seals in the moisture. Make them gluten-free simply by substituting breadcrumbs, try almond meal or try crumbs made from gf bread. For the buns, go low-carb with large pieces of lettuce to wrap around or simply use your favorite gluten-free bread or buns.
