Baked Oatmeal

A cross between oatmeal and coffee cake- assemble it the night before and then toss in the oven while you are getting ready. Pour warm milk on top and enjoy with fresh berries. Making this dish is simple as well, since you can mix most of it in the dish it will be baked in. Frozen fruit works great in the winter.

Most oats are gluten-free, but if you have a severe allergy be sure to purchase Gluten-Free specific Oatmeal as they are not processed in plants with gluten.

Baked Pear Oatmeal

A cross between oatmeal and coffee cake- even those who grew up eating oatmeal and now detest it have happily gobbled up a slice. This one is packed with pears and can be topped with apples, pears or another favorite fruit.

Buy gluten-free specific oats if you are especially sensitive as many places cut oats in the same place as gluten products. For dairy-free, simply substitute the liquid for dairy-free milk or even water.

Baked in small dishes these are basically crustless pumpkin pies. Therefore, feel free to pour this into a crust if you prefer. A dollop of our Persimmon Cream completes this dish, but plain, lightly sweetened whipped cream works well too.

Balsamic Strawberry & Asparagus Salad

Balsamic drizzled on strawberries is a heavenly gourmet treat especially on top spinach, tossed with asparagus and creamy goat cheese. Sweeten the balsamic dressing as much as you like to your personal taste. Because the asparagus is left raw, select the thinnest you can find. If you can only find thick asparagus or prefer it cooked through, steam it until tender.

Basic Lemon Vinaigrette

This simple lemon dressing is a staple in our home whenever lemons are abundant. The method of pressing the garlic into the salad bowl was taught to my mother by a French family friend and it adds the perfect essence of garlic. It will thicken slightly if you whisk in the olive oil slowly while whisking to emulsify it. If that all feels like too much work, mince up the garlic and place all of the ingredients in a jar and shake into goodness.
