We have officially entered the Holiday-eat-too-much-at-dinner-parties-galore-Season. Here is the plan… in between the festivities be extra good to yourself with tons of vegetables and if you are like me a few bubble baths, too!

Pack in the vegetables with the Apple-Squash Soup, Lemon Pilaf, or a Cauliflower Cheesehead. Of course this is the time of year for pretty sparkly dishes such as Avocado, Pear & Spinach Salad, Beet Crisps, and Creamy Ginger Kale Salad, too. The Kale Salad is perfect to make a bunch ahead as it actually mellows and flavors up with time in the fridge. The gorgeous Jewel Quinoa provides an easy protein rich side or pair it with an Apple Saute for a beautiful start to your day.

Mix and match these vegetable dishes or take them to a party to show off how delightful vegetables are this time of year.

Chicken Piccata, is an elegant dish for an easy dinner party or night at home. The side of Greens, Apples & Potatoes gives it a rustic harvest feel. Make extra of the side and warm the leftovers for breakfast with a Runny Egg.

The Chicken also goes well paired with Spaghetti Squash Spaghetti & Winter Puttanesca Sauce. Fresh Clams also top the Italian fare nicely and are especially festive this time of year.

Of course, with dinner party season in full swing try out a few delightful appetizers including the Butternut Squash & Goat Cheese Dip or the Chicken Mushroom Pate. Both freeze well too. Excellent for a last minute gathering or unexpected guests. Make a ton of the Pecan Crackers too. They will keep you and your dips supplied throughout December.
