Avocado Tahini Dressing

This simple sauce/dressing/dollop of lusciousness is a simple blend of creaminess with avocado and tahini as the stars with lemon juice and olive oil helping to keep it altogether.

Ingredients

  • 1 avocado
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • ¼ cup extra-virgin olive oil
  • ¼ cup water
  • ¼ teaspoon salt, or more to taste

Serving Size: 4 People



 

Preparation Instructions

Cut the avocado in half. Remove the pit and scoop out the flesh with a spoon. Place in the blender. Add the tahini, lemon juice, olive oil, water and salt. Blend. Add more water and/or olive oil for a thinner dressing if desired or to help the ingredients to blend better. Taste. Add more salt if desired.

To store for extended periods you may want to protect it from turning brown. Simply drizzle a bit of lemon juice or olive oil on top. If you rather not add one of those ingredients place a piece of plastic wrap snug on top. Cover and store.
