Happy December! There is certainly a winter holiday festive focus this month and in the coming weeks you will be hopefully dining, toasting and celebrating with loved ones, colleagues and co-workers. For those bring a dish events, try either the vegan Lentil Pate or the Mushroom Chicken Pate with either gluten-free Pecan Crackers or vegan Fennel Crackers. The crackers are easier than they sound and make for a fun savory hostess gift this time of year too.
Beyond the pate, mushrooms are used in the Mushroom Barley Risotto and portobellos are stuffed with Lentils & Blue Cheese. Additional blue cheese decorates a glistening Apple, Fennel & Blue Cheese Salad.
For a comforting, yet dairy-free, bowl of goodness try the Cauliflower Clam Chowder with the Avocado & Pear Salad.
Just in case you are missing pesto, try the Rainbow Pesto Pasta. Another Italian delight is the Chicken Piccata paired with Mascarpone Creamed Greens. Additional mascarpone becomes the base for the entire meal of Marsala Acorn Squash and Mascarpone Beets & Greens with Jewel Quinoa. If you have more Mascarpone Creamed Greens pair them with Eggs & Ham for breakfast.
Another great breakfast is easy to prepare ahead for company and multiple for a crowd Baked Pear Oatmeal.
