Blueberry Sauce

from Herb Tilapia with Blueberry Sauce, Wild Rice and Sauteed Radishes & Baby Beets, the Week of June 21, 2015.

Try this savory with fish or chicken or over pancakes, waffles and more. If you prefer not using white wine, try a juice such as apple or grape instead.

Ingredients

  • 2 tablespoons butter, salted, divided
  • 1 pint blueberries, 2 cups, divided
  • 1 cup white wine, divided or apple/grape juice
  • ½ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Place a small saucepan over medium heat. Melt half of the butter. Add in half of the blueberries and half of the wine, simmer for 4-6 minutes. Mashing the berries periodically and stirring until it is saucy.

Reduce the heat to low and add the remaining berries and wine (or juice). Simmer for 5-10 more minutes.

Finish the sauce with salt and a the remaining butter.

If using for a savory dish, add in a sprinkle of black pepper.
