The first day of this week’s meal plan is a big day. Yes, it is Father’s Day, but, also on this day seven incredible years ago, I married my sweet guy. Xerxes and I have always been pretty connected to the seasons and having our wedding on Summer Solstice was just about perfect.

As we mark the first week of Summer and the Meal Plan Summer Camp, I want to give you a sneak peek of the possibilities including cooking the best warm weather way: outside.

To do this properly, let’s fire up the grill a bit more often. Here is a quick list of ideas beyond the hot dog for the grill: Grilled Caesar, Grilled Vegetable Tacos with Cherry Salsa, and Grilled Parmesan Chicken paired with a Goat Cheese & Kale Pasta and a fresh Tomato + Basil Sauce.

Extra Tomato + Basil Sauce is perfect to scramble up with tofu for the Tomato Basil Scramble.

The Grilled Caesar is a simple dinner when paired with an easy Tomato Plate side. Also, make extra Caesar dressing to create an easy lunch of Kale Caesar paired with Parmesan Tofu (or leftover Grilled Parmesan Chicken).

The Garbanzo Burgers require a bit of searing on a griddle, but you don’t have to turn on the oven and it is BFF with the Apricot Celery Salad.

The Herb Tilapia is also best seared with a side of Wild Rice, Sautéed Baby Beets & Radishes and a luscious simple Blueberry Sauce. Double the wild rice to create the Cherry Wild Rice for lunch the next day which is perfect with any leftover Apricot Celery Salad, too.

Finally, to celebrate all the goodness happening on June 21st, try the Chocolate Granola sprinkled all over the Cherry Almond Yogurt.
