As spring winds down, not only is summer clearly arriving, but we get to mark the coming solstice by celebrating all of the fathers we respect and adore. What better way to mark both occasions then with FOOD!

Both my dad + my husband are Wedge Salad fans, so it was the easiest place for me to start. They are also lovers of Asparagus and Garlic Bread, so why not toss those on the grill for the dads you know to give the dishes a slightly macho edge.

Don’t stop using the grill after that, because a simple Rib-Eye Steak Grilled up with a drizzle of Chimmichurri Sauce, Argentine Potato + Tossed Salads will be a welcome twist on steak & potatoes, perfect for any Father’s Day.

Speaking of potatoes, these Roasted Fish, Potato & Cauliflower Wraps are hearty, fill you up dishes with some good for you omegas swimming throughout. It is perfect for all the papas to wrap both hands around for a monster bite of goodness.

Since not all Dads are meat + potato guys, try the Mushroom Stuffed Artichokes with Broccoli Ricotta Pasta to salute the end of spring as well.

Stock up on broccoli and toss chunks into the Broccoli Strata for a savory breakfast casserole that will give you plenty of time on Dad’s Day morning to celebrate rather than get stuck in the kitchen.

The Thai Almond Broccoli & Garlic Bok Choy makes for a heartier than usual, but still vegetarian, meal that makes a fabulous take-on-the-go Peanut Sesame Noodle dish for lunch the next day.

For a sweeter breakfast dish, the Almond Pancakes would thrill my husband, while I imagine my Dad would be pretty excited about the Sweet Orange Sauce.
