Sweet and earthy fish with Blueberry Sauce pair nicely with a bit of Wild Rice. The slightly bitter Radishes and Baby Beets are sweetened as they are seared in a bit of olive oil and butter- so even if you don’t like those veggies try them again this way. Use any available fish, berries, or veggies to make this summer feast come together.

Start with the Wild Rice since it takes the longest, then Blueberry Sauce & Veggies- which both stay warm nicely while you finish with the pan-seared herb coated fish.

Garden fresh baby beets and radishes are tender when sauteed lightly in a bit of butter. This dish is lovely with just baby beets or just radishes. If the radish greens are too strong, substitute spinach or another leafy green.

Gather herbs from your garden, almost any combination will do. Basil, mint, parsley, oregano, thyme, dill, or whatever smells delightful. Try another type of fish if you like, such as trout, salmon, or halibut. Be sure to use a nice quality olive oil or butter, since the simplicity of this dish highlights every flavor that is added.
