Beef & Spinach Lasagna with Arugula Salad

1. Prepare the lasagna.
2. As soon as it starts to bake, prepare the individual parts of the salad.
3. Take a break until the lasagna is done and out of the oven. While it rests for 5 minutes, toss the salad.

Classic Beef & Spinach Lasagna

This is a perfect winter dish since the only fresh ingredient required is an onion. If using fresh winter greens, chop small, saute them and squeeze or cook out the excess moisture. Leaving the lasagna noodles dry makes this dish faster to put together and the noodles stay a bit more el dente as well. If you prefer cooking them first, feel free. Just remember to under cook them slightly.

Arugula Parmesan Salad

The bitter bite of arugula is paired with strips of parmesan and a drizzle of sweet vinegar. Use a thick, aged balsamic or sweeten up a thinner balsamic with a bit of honey, maple syrup or agave nectar.
