Green Salad with Cucumbers & Tomatoes

Lightly dressed, garden fresh cucumbers & tomatoes compliment each other on a bed of leafy greens.

Ingredients

  • 1 tablespoon lemon juice, fresh or your favorite vinegar
  • 1 teaspoon dijon mustard
  • 3 tablespoons olive oil, extra virgin
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 cucumber
  • 1 tomato
  • 3 cups lettuce, washed, dried and torn in pieces

Serving Size: 2 People



 

Preparation Instructions

Whisk together the lemon juice and Dijon. Slowly beat in the olive oil until thick. Season with salt and pepper.

Peel the cucumber if desired and cut into thin slices or half-moon slices.

Cut the tomatoes into thin wedges

Arrange the vegetables onto the lettuce leaves. Drizzle on the dressing and serve immediately.
