Orange Kissed Squash

Mashed up squash receives just a touch of orange zest & juice for a kiss of flavor. Most any winter squash will do: buttercup, acorn, hubbard pumpkin, butternut…
If you have more than a couple pounds of squash, just add more orange zest & juice to your personal taste. Makes amazing leftovers, too.

The beauty of this sauce is while delicious as a salad dressing it is also divine tossed with sauteed vegetables or drizzled across roasted vegetables. Double the batch you make at the start of the week for several unique dishes.

Leftover oatmeal? Save it and create a whole new breakfast the next day. A bit of orange zest is mixed in to brighten up the flavor. If you want a drizzle of honey in the mix, it is entirely optional since every diner can also add more sweetness to their personal taste. If gluten intolerant seek out the oats that specify they are gluten free.

Orange Roasted Chicken

Roasted Chicken has a lovely flavor on its own, but adding oranges that roast under the skin adds another layer of flavor that takes chicken far from boring. Chicken thighs are best if you are nervous about under cooking your poultry. You can overcook these a tad and they remain moist. If you do not like thighs, use a large chicken breast for two servings.

Winter is certainly a time of a sporadic access to various produce and this salad is very reflective of this time as oranges are coming in to season, just as pears are going out. Find that sweet spot where they overlap and make goodness in the form of this simple salad.
