Chipotle Cream

Whenever you use sour cream on a Mexican dish, try this instead to add a bit of spice and cooling at the same time. We use yogurt to get a bit more natural acidophilus in our diet, but sour cream works too. You can buy chipotles in adobe sauce in a can. Just blend the peppers to make a sauce that is easy to use in recipes. If you want to skip the can you can find tasty chipotle powders such as from the Savory Spice Shop as well.

This lovely narrow squash does not require peeling to enjoy it roasted as the skin is fairly thin. Tossed with chipotle and a pinch of cinnamon takes it from simple to fabulous.

Smoky, spicy chipotle is mellowed in the creamy cherve goat cheese. Roll in ground pumpkin seeds with just a pinch of ground chile or chipotle powder. Spread onto bread or crackers.

Spicy chipotle mixed with sugary roasted sweet potatoes is a simple side for Mexican dishes instead of Spanish rice. Use chipotle peppers in adobe sauce, chopped up, or chipotle powder. Add more or less spice to your personal taste.
