Sesame Soba Noodles

Enjoy these slick noodles with any stir fry of vegetables. This dish is especially popular during Chinese New Year when the long noodles symbolize a long life— just beware not to break any of them and ruin your chances. For a gluten-free option use brown-rice or Asian rice noodles.

Ingredients

  • 8 ounces soba noodles, or rice noodles for gluten-free
  • 1 teaspoon salt, or more for the pasta water
  • 2 teaspoons sesame oil , or more if desired
  • 1 tablespoon sesame seeds, or more if you prefer

Serving Size: 2 People



 

Preparation Instructions

Bring a large pot of water to a boil. Add the noodles, a big pinch of salt and boil according to the package for about 5-8 minutes, depending on the noodles.

Drain the noodles well, shake off the excess liquid. Toss with the sesame oil and then sprinkle in the sesame seeds.

Add more to taste, if desired.
