With the last weekend in August and the first of September happening, back-to-school is in the air. I believe nature wants to go easy on us this time of year, with an abundance of steady vegetables coming in to make dinner a bit more straightforward.
It is especially nice when it simply requires tossing together salads such as the Fire + Ice Tomatoes, Black Bean + Corn Salad, Watermelon Salad, Chunky Tabbouleh, Asian Cucumber Salad, and the Plum, Summer Squash + Avocado Salad.
Eggplant Patties can be smashed together and even frozen for a quick dinner. They take on a mediterranean theme with the Tahini Sauce and Chunky Tabbouleh.
With an abundance of summer squash, the Bacon Wrapped Halibut is a great way to fancy up zucchini.
Asian inspiration brings the Thai Watermelon Soup to the table paired with Peanut-Sesame Noodles. Take the noodles for lunch on the go with the Asian Cucumbers.
For an ode to NOLA, try the Cajun Chicken with Grilled Okra.
Breakfasts can be simple with quick scrambled and stuffed Summer Squash Pitas and a Blueberry Smoothie. Or whip together the Peach Puffed Pancake and let it bake while you get ready for your day.
