The day that marks all the beautiful mamas in this world is coming soon! Many of you reading this are probably moms, so I am hoping you will have a happy day of celebration and that you share a few of these recipes this week with your partner or children to drop the hint that you would like a few meals whipped up for you.

The Rhubarb Pork Sliders can be made in the oven or crockpot without too much work. The Rhubarb Barbecue Sauce melts the beautiful ruby stalks into a delightful accompaniment to the shredded pork. Pair it with the Rhubarb Minted Peas. This sassy dish is easy to take on the go for a lunch especially when paired with a Creamy Radish Salad and Marinated Cauliflower.

If dads are in charge, there is a chance that the grill might be whipped out. But, you can make the focus veggies with the Grilled Portobello Burgers, Grilled Artichokes with Yogurt-Basil Aioli and Arugula Parmesan Salad.

Kid will love helping make this Creamy Feta, Snap Pea + Strawberry Pasta Salad. Butter knives can cut the strawberries, snap peas can literally be snapped into pieces and the sauce for the pasta can be whipped up easily with little hands.

Of course, breakfast in bed is essential in my home on Mother’s Day and the Strawberry Cheesecake Oatmeal Bake can be made the night before to easily bake up the next day. Meanwhile, the savory Asparagus Brie Fritatta is simple to toss together and is especially lovely paired with the Red Velvet Smoothie.

Not to be missed the Mexican-American holiday Cinco de Mayo is this week and the Spring Fiesta Salad with Feta-Guacamole and the Tequila Lime Shrimp Taco Salad are great ways to toast the occasion. All of these delights do not require Homemade Tortilla Chips but it is a lot more fancy and fun to try it!
