The Food
This is it! Get ready for a week of feasting, eating and celebrating.
The beauty of this season is everyone has their own food traditions. Some of us want a second round of turkey such as this Herb-Butter Roasted Turkey, which pairs beautifully with the Italian inspired, naturally gluten-free Polenta Herb Stuffing. A creamy Chestnut & Clementine Salad and Gravy complete the meal.
Others are warming a smoked ham and some are enjoying duck or goose, while several of us are lighting a menorah and passing out latkes. Whatever your traditions try a few of these farm fresh inspired dishes this week.
Give this year’s Roast Duck an Asian essence with a Smoky Orange Sauce and Star Anise Cranberries. Pair all of this with Mustard Creamed Brussels Sprouts and Ginger Turnips & Greens.
For a vegan holiday dinner, try my new favorite ‘meatloaf’ aka Lentil Nut Loaf, which is packed with lentils, nuts and vegetables instead of the typical meat. A drizzle of Cranberry Glaze completes the dish even meat lovers would consider delicious. Pair with Kohlrabi Creamed Greens or if you are not vegan and want something richer, try the Mascarpone Creamed Greens. Roasted Sweet Potatoes & Florets will dazzle alongside.
Combine a few of the seasons best sides into a meal or incorporate them into your holiday feast. Try the Roasted Pumpkin Salad, the Mushroom Gratin and Triple Ginger Sweet Potatoes.
This year, whether or not you celebrate Chanukah try the latkes, in Sweet Potato form too. Mix & match all of the toppings, including Pecan Butter, Apple Sauce, Lentil Caviar (or buy the real caviar if your budget allows) Creme Fraiche, Capers, and Smoked Salmon
Leftovers of course are better when refreshed and used in a new way such as a dollop of the Star Anise Cranberry Sauce in the Cranberry Bok Choy Stir Fry. My craving for salad always increases just as the dishes of leftovers start coming out. Try this Leafy, Leftover Turkey Salad for a great way to use up the turkey or duck. And of course, don’t forget to make a nutritious broth with any bones.
Throughout the world, one of the most common Christmas Eve dishes is a seafood stew. Try the simple, yet elegant Bouillabaisse with a variety of sustainable seafood simmered together. Complete the dish with two salads, the Fennel & Blood Orange Salad and Cranberry & Candied Walnut Salad. French bread is perfect for dipping in the dressings & rich broth and the traditional creamy Saffron Rouille is necessary to drizzle on top of the Bouillabaisse.
For a simple, Christmas morning breakfast or easy meal throughout the week try the Chard Quiche with a finger pressed Whole Wheat Crust and a fresh Winter Fruit Salad with a squeeze of lime.
