Winter

Wilted Greens

Saute hearty winter greens such as kale, chard, or collards with a splash of oil until they wilt and sigh into tenderness.

Ingredients

  • 1 teaspoon olive oil
  • 1 bunch greens, washed and dried
  • 1 pinch sea salt

Serving Size: 3 People



 

Preparation Instructions

Slice out any tough stems (such as with kale). Stack up the leaves and roll up like a cigar. Slice along the roll into long strips.

Add a splash of olive oil to a pan over medium heat.
Toss in the greens. Increase the heat slightly and toss lightly until the greens are wilted and barely cooked through.

For tougher greens such as chard or collards add a splash of water and continue to saute until they are a bit more tender— if desired.

Sprinkle with a pinch of salt to taste.
