With all of the hustle + bustle going on these days, this week’s meal plan offers dishes that will bring comfort during the hectic as well as options that could easily sparkle on any holiday table or even be brought along for potlucks or celebrations. The Sweet Potato + Bean Shepherd’s Pie has a hint of cocoa to add a bit of festive charm. It travels to a party well, but it also is a comforting mid-week dish. Roast up several sweet potatoes at one time, so that you can also indulge in Sweet Potato Biscuits with Sausage Gravy and Sweet Potato Pancakes with Ginger Pears, each perfect for simple, yet fancy breakfasts. (Holiday brunch, anyone?)

Need a snazzy appetizer this season? The Pomegranate Coconut Shrimp Cocktail will do the trick. If making ahead, fry the Coconut Shrimp up in advance, cool, store, and then toast up on a baking sheet just before serving. The Pomegranate Cocktail Sauce sounds fancier than it is to make with just a few ingredients. For a weeknight meal, it goes beautifully with a Lemon-Ginger Cauliflower and the Coconut-Kale Salad.

Another lovely appetizer can double as a lunch. The Pecan Crackers are also a great hostess gift paired with this Chipotle Goat Cheese Log. Add a simple Apple Salad to complete the lunch on the go, too.

We have been fighting a cold in our house and soup has been a critical part of our healing. This Roasted Cauliflower Soup feels rich and luscious, but has no dairy and no meat, unless you use a rich broth as we often do. Pair it with the Caramelized Onion, Apple + Hazelnut Salad for a simple nourishing meal.

Since we are sneaking up on some even bigger holiday feasts, there are a few dishes this week to consider adding to that menu (just tuck them in your Recipe Book!) The Squash Spoonbread is a humble, yet lovely dish to serve on its on with a simple Saute of Greens or as a side dish to a greater meal. Roast Beef may very well grace your table and paired with a Blue Cheese Cauliflower Gratin, Warm Portabello Salad and Sweet Potato Biscuits would complete your meal quite nicely.

Extras of the Roast Beef are perfect tucked into the Roast Beef Sandwich with Creamy Blue + Cranberry Sauce.
